Melt the butter in a saucepan, add the finely chopped onions, salt and pepper and cook for about 15-20 minutes over low heat. Once the liquid has evaporated, add a little water at a time. Remove from heat and let cool slightly. Cook the penne al dente. Now mix the onions, the egg yolks, the grated parmesan and the parsley, then add the hot penne and toss in it. Transfer to warmed plates and sprinkle with freshly ground pepper, some chopped parsley and a little more freshly grated Parmesan.
