Penne Zucchini Salad with Melted Tomatoes

Instructions:

For the penne zucchini salad with melted tomatoes, peel the ginger and garlic and chop very finely.

Wash the zucchini and cut into small cubes.

Peel tomatoes as desired, for this briefly dip in boiling water (“blanch”), peel off skin and also cut into small cubes.

Cook the pasta according to package instructions in salted water with a dash of olive oil until al dente. Rinse very briefly in cold water, drain and place in a bowl.

Meanwhile, heat some olive oil in a pan, add garlic and ginger and sauté briefly.

Add tomatoes and toss in for just about 1-2 minutes. (They should only “melt” a bit, but not be fried!)Remove from heat.

Add zucchini cubes, salt, pepper and season with chili and oregano.

Mix with the now lukewarm pasta. Mix 2-3 tablespoons of olive oil with peanut butter until smooth, season with a squeeze of lemon juice, salt and pepper.

Cut mozzarella into flakes or small cubes and spread over the penne-zucchini salad with melted tomatoes.

Preparation Tip:

Before serving, drizzle the penne and zucchini salad with melted tomatoes with a little balsamic vinegar and garnish with fresh herbs.
