Instructions:

Turn the pike fillet through a meat grinder. Add egg white and whipped cream (adjust amount!), season with salt, pepper and nutmeg and mix. Knead until smooth and put aside to cool.

For the broth: sauté the vegetables and spices in the oil-butter mixture, add the bones and the pike head and pour in water until the whole is covered. Let it boil and simmer for half an hour maximum, do not stir. Pour through a fine sieve and season strongly with salt and freshly ground pepper.

Using two spoons, form dumplings from the pike mixture, shape into the simmering broth and cook until the dumplings rise to the top – in about five minutes.

Bring three to four dumplings per person to the table with the gravy in soup cups or possibly ~plates, sprinkle with finely chopped chives or possibly parsley.
