Try this delicious cake recipe:

Quickly knead butter, flour, sugar, salt and a tiny bit of water into a firm shortcrust pastry. Formed into a roll and wrap in plastic wrap and refrigerate for at least half a day to allow the gluten to develop. Roll out thinly, spread it on the springform base (26 cm ø) covered with parchment paper. Prick the dough a few times with a fork to keep it nice and flat, and sprinkle with ground almonds. Cut the plums in half, remove the seeds and cut into narrow wedges. Very accurately line the bottom from the outside to the inside with circles of plum slices, sprinkle them with sugar. Bake in a 270 degree oven for about 30-35 minutes. While still hot, brush with apricot jam, which has been boiled with water and – if pieces of fruit are still visible – passed through a sieve. Serve warm, for example with fresh plum slices and sprinkled with cinnamon. You can also make 6 small portion cakes.
