Instructions:

Knead together fat, flour, sugar, egg, lemon zest, 1 pinch of salt, baking mix and rum flavoring to make dough. Wrap in plastic wrap and chill for 1 hour.

Roll out the dough on a floured surface until it is 3 mm thin. Cut out different shapes from it and place on a baking sheet lined with parchment paper. Bake the cookies on the 2nd rack from the bottom at 175 degrees for 10 minutes. Cool.

Stir together powidl and 2 tsp. juice of one lemon. Spread half of the cookies with the puree. Let dry for 20 minutes, then place the 2nd half on top.

Melt minced cooking chocolate in a hot water bath. Mix powdered sugar, 3 tsp juice of one lemon and food coloring. Fill cooking chocolate and icing into small bags and decorate the cookies with it. Allow the cooking chocolate to set.
