Cut the meat into cubes. Clean the vegetables, cut the spring onions into 2 cm pieces, the celeriac into small strips, and the carrots and kohlrabi into sticks. Cut the potatoes into cubes.

Heat the fat in a saucepan and brown the meat cubes. Add onions and douse with beef broth. Add vegetables, except for potatoes, season with salt and pepper and nutmeg (freshly grated) and make about 35 min. on medium heat. Add the potatoes 10 minutes before the end of the cooking time. Season to taste.

Tip: Instead of clarified butter, you can also use butter in most cases.
