Prepare: Dry chops with paper towels, season.
Breading: Mix all ingredients up to and including curry in a shallow dish. Beat eggs in a deep plate. Turn chops in egg to start, then in breadcrumbs on other side, pressing them well to smooth.
Fry: Fry the chops in the hot clarified butter over medium heat for about 2 minutes on each side. Then finish frying at lowest temperature, turning occasionally, for about 1 0 minutes.
Tip: Instead of clarified butter, you can also use butter in most cases.
