Hull the beans.

Cut the garlic bulb in half horizontally, including the skin. Add bay leaf and water (barely covered). Simmer gently for fifteen minutes over low heat.

Blanch the tomatoes briefly, cool, remove the skin, halve and remove the seeds. Cut into quarters or eighths. Cut the peppers into quarters lengthwise. Remove the white ribs including the seeds, then cut in half again lengthwise. Cut onion into eighths as well.

Heat oil in a casserole. Add peppers and stir-fry for five minutes. Turn down heat, add onion and tomatoes. Cover and simmer gently for ten minutes. Add beans without liquid, squeeze garlic from bowl directly to taste and just warm. Season vigorously with salt and freshly ground pepper.
