For the spilling compote, remove the seeds from the spillings and cut them in half. Put on with water. Bring to the boil briefly and then simmer on low heat for about 10 – 15 minutes.

Towards the end, add the squeeze of lemon. If necessary, add sugar to taste. If the fruit is even harder, use a little more water, if necessary add more.

Preparation Tip:

Very ripe fruits do not need sugar at all because they are incredibly sweet, but have a sour note due to the peel. Spillings belong very quickly processed and are not suitable for storage. A spilling compote is therefore a good way to have longer something from the delicious fruit.
