For the red lentil soup with chicken, clean the soup vegetables and cut them into coarse pieces. Peel the onion and dice it as well. Heat the olive oil in a pot and sauté the vegetables briefly.

Sauté the red lentils briefly and pour the soup over everything. Add the chicken to the soup and bring to a boil. Let it boil until the chicken is cooked through and the lentils are soft (about 20 minutes).

Remove the chicken from the soup and set aside. Add the tomato paste, cumin, coriander and salt to the soup.

Blend everything well and season with the spices if necessary. Remove the chicken from the bone (if available) and cut the meat into strips.

Before serving, add the meat to the finished soup, sprinkle with some mint and add a piece of lemon. Drizzle the lemon over the soup before eating.
