Instructions:

For the red lentil soup with coconut milk, peel and finely chop the onion, wash, seed and finely dice the bell bell pepper and chili bell pepper. Grate ginger finely.

Heat oil in a saucepan, fry ginger, diced onion, curry and finely chopped chili for a few minutes. then add lentils and paprika powder and stew.

Pour in vegetable soup and 350 ml coconut milk and bring to a boil. Simmer for 45 minutes until the red lentils break down.

Purée with a hand blender and strain through a fine sieve. Season to taste with salt, pepper and lemon juice.

Heat the remaining coconut milk and whisk until frothy. Pour the red lentil soup with coconut milk into bowls, or glasses, spoon the coconut foam over the soup and garnish with fresh dill sprigs.

Preparation Tip:

The red lentil soup with coconut milk goes well with boiled rice.
