– Gu Kitchen Guide – posted by K.-H. Boller – modified by Bollerix Cook the noodles in boiling hot water for about three minutes. Drain, rinse with cold water and drain thoroughly.

Remove the peel from the onions, rinse the tomatoes and remove the stalks. Cut both into coarse cubes. Remove the skin from the garlic and chop finely. Rinse the chives and cut them into fine pieces.

Heat three tablespoons of oil in a large frying pan and roast the rice noodles with the soy sauce for about one minute, stirring over a high temperature. Divide evenly among four plates and keep warm.

Heat the remaining oil in the frying pan. Fry the garlic in it until golden. Add the minced meat and the onions and fry for about two minutes over medium heat. Add the tomatoes, fish sauce, vinegar, sugar and about 1/4 liter of water. Do it again for one minute.

Mix the maizena (cornstarch) with a little water and blend it into the sauce, it should become slightly viscous. Pour the sauce over the warm pasta and sprinkle with pepper and chives.

Tip. Season to taste with chili spice at the table!
