Instructions:

Pluck the parsley and finely chop it together with almonds, both nuts and garlic or grind it in a blender. Mix the Parmesan cheese with ricotta to a smooth cream. Stir in the nut mixture, egg yolks, a little salt and a pinch of nutmeg. Pre-cook the cannelloni according to package directions or fill immediately with the ricotta mixture. Grease a baking dish with butter. Cover the bottom of the baking dish with a layer of bechamel sauce, place the cannelloni side by side on top and pour the remaining sauce over them. Sprinkle with Parmesan and bake in a preheated oven at 220 °C for about 25 minutes.
