Cut cabbage into 8-16 pieces, remove the stalk, blanch. Fry the meat in butter, add the chopped onion, garlic and ginger and fry briefly. When the onion starts to turn yellow, extinguish with 2 tbsp. water and vinegar, reduce the temperature and roast on a very low flame for 15 minutes with the lid closed. (This can only be done on a gas stove, if you have an electric stove, you might want to use a different hot plate, otherwise it will burn easily!) Add bay spice and raisins, place drained cabbage pieces around the roast. Cover and cook on low heat for another 45 minutes. Then remove the roast and disassemble, season cabbage with another 2 tbsp vinegar + water and salt + pepper.
