Instructions:

Preheat the oven to 210 degrees. A deep ovenproof plate in the stove form and preheat.

Season the salmon fillet with salt and pepper and dust lightly with flour. Cut the bacon into thin strips. Heat the oil in a frying pan and roast the salmon in it on the flesh side for 2 minutes. Add the garlic cloves and the bacon. Turn the salmon to the other side and roast on the skin side for 3 min. Then slide skin side down onto the hot plate, surround with garlic and bacon and roast in the oven for 15 min.

In the meantime, for the sauce, remove the skin from the shallot and chop finely. Drain the oil from the frying pan and add the shallot and vinegar to the frying pan. Stir well until the vinegar has evaporated. Pour on the crème fraîche and veal stock and cook the sauce until it is nice and creamy. Whisk in the butter in small flakes and remove the sauce from the heat.

Serve the fish with the sauce. It goes well with spinach leaves steamed with a little butter.
