Cut lettuce into strips. Peel garlic and cut into fine leaves. Remove the core from the pear and cut into fine strips. Sauté garlic in butter and stir in 1 tsp sugar. Heat until lightly colored and add the squash and pear strips and toss in the pan. Deglaze with a generous drizzle of pear balsamic. Add the radicchio and toss briefly. Salt and pepper the salmon fillets. Fry on the skin side in olive oil over moderate heat until you see the heat slowly come up. Now turn the salmon fillets and roast in the oven at 150 °C to the point. This will take just under 2 – 3 minutes. Arrange salmon decoratively on pumpkin radicchio.
