The washed beef in boiling salted water form, add spices and cook for a good 90 min at low temperature. Chop the root vegetables and onion. After half an hour add to the soup. Chop the sauerkraut, slice the peeled potatoes and simmer both in the soup for another half hour. Remove the meat and spices and season the soup again. Dice the meat and add it to the soup again. Just before serving, fold in the whipped cream.

Tip: Cook only with high-quality spices – they are the be-all and end-all of a good dish!
