Instructions:

Sourdough: Stir everything together and leave well covered in a warm place for 24 hours.

Bread dough: Mix 700 g of sourdough (leftover. 100 g for next starter), rye, wheat, warm water or buttermilk and salt. Later add yeast and spices. Knead the dough for 10 minutes.

Once the dough has risen a little bit, fold it another time. Repeat this process a few times (contributes to the dough maturity). Knead in oil seeds. Preheat oven to highest setting and place bowl of hot water inside.

Grease bread pan with butter and sprinkle with flour. Pour the dough into the pan. After the bread dough has risen a little, put the bread in the heated oven and bake at about 200°C.

If the whole recipe is baked in one big pan, the baking time is 80 min, in 2 small pans it is 1 hour. During the last 10 minutes of baking, sprinkle the bread twice more.
