Instructions:

For the saddle of venison, cream butter and powdered sugar with yolks and warmed chocolate. Whip the snow, beat with granulated sugar and fold into the dough. Finally, mix almonds and breadcrumbs into the mass.

Pour the mixture into greased, floured saddle of venison cake pan and bake for about 50 minutes. Slice the cooled saddle of venison twice.

Fill with jam and coat the outside with jam. Cover the saddle of venison with chocolate icing and spike with almonds.

Preparation Tip:

Serve the saddle of venison with whipped cream, if desired.
