Instructions:

From the dough ingredients knead a shortcrust pastry and put to cool.

For the filling, squeeze sauerkraut well and cut into small pieces.

Put the meat, shallots and juniper berries through a meat grinder.

Add pepper, salt, egg yolk, caraway seeds and sour cream. Mix in parsley and season very spicy.

Roll out two thirds of the dough into a rectangle. Spread a loaf pan (11x25cm) with the dough. Cut out small figures for decorating from the leftover dough.

Put the filling into the form, fold the edges of the dough (1cm) over it, brush with egg white.

Roll out the remaining dough to the size of the mold, place it on the filling and press it down firmly. Cut out four smaller holes. Bake in a heated oven at 180 degrees for about 70 minutes until golden brown. After 45 min. decorate the surface with the dough figures and brush with egg yolk whisked in milk. Continue baking.

Serve with Cumberland sauce.
