For the shrimp coconut curry, finely chop onion, garlic and ginger. Cut carrots, bell bell pepper and zucchini/broccoli into strips. Rinse shrimp in cold water and drain.

Sauté onion, garlic and ginger and add curry paste. Deglaze with the vegetable soup and add the coconut milk, simmer uncovered for about 5 minutes and thicken slightly if necessary.

Add the vegetable sticks and shrimp and simmer for another 2-3 minutes (be careful not to overcook, otherwise the vegetables will lose their color and become too soft).
