Select sloes, rinse them briefly and let them drain properly on a dish rack, then spread them out and dry them for another day. Fill into a wide-necked jar, pour the candy over it and add the gin. Close the jar and let it stand at room temperature for 6 weeks until the candy around it has dissolved. Later shake vigorously and filter. Bottle and leave to infuse for about 6 weeks.

The sloe gin looks blue-red in the beginning and becomes more brownish over time. The quality does not suffer due to the color change. Speaking of which, if the sloes are ripe and haven’t had a frost yet, you can help them along: Spread the sloes on a tray and put them in the freezer for a few hours. Process them when they are thawed.
