Actually, for this dish you need a pudding mold made of glass, stainless steel or ceramic. In no case is a mold made of aluminum suitable, because the onions in this metal take on a hideous color and unpleasant flavor. If you do not have such a closed mold, you can safely use a high gratin dish and cover it with foil.

Peel the onions and potatoes and cut them into slices or rings, cut the beef into cubes of 2 centimeters.

Finely grind peppercorns, salt, new spice, marjoram and mace in a mortar. Layer potato slices and onion rings alternately in an ovenproof pudding dish. Season each layer with this mixture, intersperse with the meat cubes and season as well.

Finally, mix whipped cream and crème fraîche and fill the mold with it. Shake the mold so that the liquid is well distributed everywhere.

Close the give well, put it in a saucepan that will hold it comfortably. Pour enough hot water to surround it to 2 to 3 inches below the rim. Let the water bubble up and keep it at a gentle simmer. Cook the Spanish Fricco in this way for three to four hours, by which time the potatoes and onions will be meltingly soft.

The high gratin dish, well covered with foil, is best placed in a suitable roaster with hot water in the oven at 150 degrees.
