For the wholemeal spelt sponge fruit cake, first prepare the sponge. For the spelt sponge cake, first separate the eggs and beat the egg whites until stiff.

Beat the egg yolks in another bowl with the sugar and vanilla sugar until nice and fluffy. Now add the mineral water. Gently fold in the flour and the beaten egg whites.

Spread on a baking tray and bake the mixture at 180 °C for about 7 minutes. Allow to cool. In the meantime, prepare the fruit. Once the dough has cooled, spread it with jam and top with the fruit.

Prepare the cake jelly as described on the package and after it has cooled down a bit, spread it on the cake and chill it until everything is firm.

Preparation Tip:

The spelt wholemeal sponge fruit cake can of course be topped as desired, depending on the season and taste. It is best to prepare two bases at once and freeze one.
