For the spice bread with honey and nutmeg crumble yeast in lukewarm water and let stand for 3-4 minutes. Then whisk with the water. Mix flour, salt and the chopped nuts in a large bowl.
Heat the milk, honey and nutmeg spice in a pot. Now mix the yeast liquid, the warmed milk mixture, all the other spices and the olive oil together and knead the mixture in a food processor for a good 5 minutes.
Then cover the dough and let it rise in a warm place for about 1 hour. Knead the dough again just briefly, shape into two round loaves and place on a floured baking sheet.
Let the dough rise for another 1/2 hour. Finally, sprinkle the dough with some whole wheat flour and bake in a preheated oven at 225 °C for 30 minutes. I put another small cup full of water in the oven.
Preparation Tip:
Instead of walnuts, you can use other nuts for the spice bread, or omit them altogether.
