For the spinach-fish roulade, cut the fish into cubes and mix with lemon juice, ginger and salt. Wash the spinach, blanch, rinse in ice water and squeeze well.

Preheat the oven to 180 °C top and bottom heat. Finely chop the garlic. Cut the spinach leaves into smaller pieces and mix with the Soy Cuisine, garlic, nutmeg and salt.

Roll up puff pastry, spread spinach on top, leaving the edges free. Place fish cubes on top of spinach. Fold side edges over filling and roll up puff pastry tightly.

Place roulade, pastry edges down, on a baking sheet, brush with soymilk and bake for about 40 minutes, until roulade is brown.

Preparation Tip:

The spinach and fish roulade also tastes very good cold.
