Instructions:

For the Surf & Turf with cocktail sauce, first prepare the cocktail sauce. To do this, first make a mayonnaise. To do this, put the egg, salt, pepper, mustard and lemon juice in a mixing bowl and bring to room temperature. Mix well with a blender and keep adding oil until the mixture is nice and firm. Mix mayonnaise with ketchup and cognac and season with salt.

For Surf & Turf, salt the steaks (approx. 150 g each) and sear well on both sides in a very hot pan. Sear for one minute per centimeter of thickness on each side so that the steak is cooked through. It should be turned every minute.

Remove steaks from pan and wrap in aluminum foil for about 10 minutes. Add butter to the pan and in the meantime, sauté the shrimp (head and guts removed) until they are nice and pink – then add the steaks and heat well again.
