1. prepare approx. 250 g of the sweet potatoes until soft, drain and cool.
Remove skin from remaining sweet potatoes (150 g), cut into 1 cm cubes and roast in 10 g butter and 1 tsp sugar for about 5 min.
Remove from heat and cool.
3. let the yeast melt in the milk. Remove peel from potatoes and mash with a fork. Beat eggs with sugar and salt until creamy. Mix in the yeast-milk mixture and the mashed potatoes, add flour and butter, stir until a silky smooth dough is formed.
Incorporate potato cubes.
4. put the dough in a suitable bowl, cover with cling film and rest in the refrigerator for one night.
The next day, butter a large loaf pan (capacity 1.5 liters) thinly and sprinkle with flour. Preheat oven to 180 °C. Knead the dough briefly, fill it into the form and let it rise in a warm place for about 45 minutes. Bake the bread in the oven for about 45 minutes.
