Instructions:

Lightly dust both sides of the sardines with flour at least 2 hours before serving. Roast briefly in hot oil until browned on both sides and place in a deep earthenware dish.

Strain the oil from the frying pan, cool and pour again into the frying pan. Add the pepper, chili and garlic and roast gently until the garlic turns golden. Remove from the heat. Add the paprika, vinegar, bay leaves, wine, water and salt. Bring to a boil and make a minute. Pour the hot marinade over the sardines. Marinate at room temperature for at least 1 hour.
