For the Tel Aviv salad, cut the onion into thin rings. Place in a small bowl and sprinkle with lime juice until it is bright red and has lost its pungency.

Cut the watermelon into bite-sized pieces, dice the feta and place both in a large bowl.

Pluck and roughly tear the parsley leaves, chop the mint and add both to the salad.

Add the onion without the juice (but keep it), the oil and the olives as well and mix everything gently with your hands.

Stir the juice of the onions, salt, pepper and honey and pour over the Tel Aviv salad.

Preparation Tip:

As a variant, you can use once honeydew melon instead of watermelon for Tel Aviv salad.
