Remove the skin from the apples and remove the core with an apple corer. Bring sugar with water to a boil. Add apples and make about 10 minutes in a closed saucepan. With a skimmer, remove the apples, keeping the syrup. Mix nuts, raisins, one tbsp sugar syrup (from boiling apples), cinnamon, new spice and vanilla sugar and fill in apples. Place in a greased ovenproof dish. Beat egg whites until stiff peaks form. Carefully fold in one tbsp of syrup. Fill into a piping bag and pipe onto the apples. Gratinate under the broiler.
