Instructions:

For the turkey breast with asparagus, wash the asparagus. Peel the white asparagus whole, the green only at the lower end. Remove woody ends.

Steam the asparagus in salted water with a pinch of sugar for 12 minutes until firm to the bite.

Take out the asparagus, let it drain and let it cool down a bit.

Peel shallots and garlic, chop very finely and whisk vigorously with oil and vinegar. Season with salt, pepper and sugar. Finally, stir in the chopped herbs.
