The perfect leftover meal! If you have some turkey left over from the opulent holiday meal, shred the meat into bite-sized pieces.

In the meantime, bring water to a boil and cook tagliatelle or any other pasta of your choice that you happen to have at home, according to package directions.

Mix two egg yolks with whipping cream. Add salt and pepper.

Drain the cooked pasta, reserving some pasta water, and let cool very slightly. Mix the noodles with the turkey meat and quickly stir in the egg-whipped cream mixture. If needed, mix in some of the reserved pasta water to make everything nice and creamy.

Sprinkle with a little Parmesan cheese and chives to taste.
