Instructions:

For the gnocchi, boil the beet in salted water with caraway seeds until soft. Remove and peel.

Boil the potatoes in salted water until they are soft. Then remove and peel in the same way. Mash potatoes and beets together and let cool.

Mix with the remaining ingredients to form a dough and let rest in a cool place for 15 minutes.

Form gnocchi, boil once in salted water and then finish cooking 10 minutes below boiling point.

For the shredded turkey, season turkey strips with salt and pepper and sear in a hot pan with olive oil. Remove from pan.

In the same pan, sauté shallots and shiitake for 5 minutes. Add whipping cream and simmer for 5 minutes. Add jus and simmer on low heat for 2-3 minutes more. Finish with parsley.

Preparation Tip:

Before serving, toss the gnocchi with beet juice and 1 tsp butter in a saucepan.
