Peel two narrow strips of peel from each fruit and cut into paper-thin strips. Remove the tops and bottoms of the fruits. Stand fruit up, cut peel and skin into small pieces from top to bottom. Separate flesh into wedges between membranes over a baking dish.

Remove peel from ginger and cut into narrow slices. Bring sugar, ginger and 30 ml cold water to boil while stirring. Stew gently for 1 min, remove ginger. Stir in zest strips, gently toss for 1 min and remove. set aside. Combine fruit slices and juice with syrup, bring to a boil. Remove from heat, garnish with the strips and bring to the table.
