As simple as it reads, this recipe is also: wild boar meat from the leg can be roasted very well for a short time. Buy a boneless leg of wild boar cut as evenly as possible and cut it diagonally into 4 steaks thick on the spot.

Crush the juniper berries so that they pop a little. In a heavy frying pan, heat the butter with the oil until very hot. In the meantime, season the steaks with salt and pepper on one side, and then place them in the hot frying pan with the seasoned side down, and while they are browning at a fairly high temperature, season them with salt and pepper on top as well.

Sprinkle the juniper berries next to the steaks, this will give an extra flavor. After 2 min. on the other side turn the steaks and after another 2 min. fierce searing turn the temperature to relatively low. You continue to roast the steaks for another 2 min. like this, on the other side turn them repeatedly, turn off the temperature and leave them in the hot frying pan for another 4 min.

Now the steaks are done, juicy, and probably still slightly pink in the middle – great. You don’t need sauce with this, I think. Just glaze the steaks with the frying fat. Otherwise, everything fits together with it, which you also otherwise like to serve as an entrée to game.
