Instructions:

Mix well minced meat and all ingredients up to and including pepper, knead briefly by hand.

Roll out pasta dough, spread evenly. Divide meat mixture in half, spread evenly on each pasta dough, roll up (*). Place rolls on a baking sheet lined with parchment paper.

Mix butter with wild garlic. Brush the rolls with half of the wild garlic butter.

Bake: about 45 minutes in the lower half of the oven heated to 200 °C. While baking, brush the roulades a few times with the remaining wild garlic butter.

Wild garlic mousse: mash wild garlic with soup. Mix in the curd cheese. Whip the egg whites with the salt until stiff, fold into the wild garlic mixture, bring the foam to the table on the spot.

(*) Roll up the dough: Spread the meat mixture evenly on the dough, leaving a 2 cm wide border on one side. Roll up from the other narrow side.
