For the zucchini with fig couscous, cut the zucchini into finger-thick slices. Using a mocha spoon or a so-called Parisienne cookie cutter, hollow out one side to create a hollow.

Pour a little olive oil into a coated pan, place zucchini slices in pan and fry briefly.

Prepare couscous as described on the package. Peel the figs, cut them into small pieces and mix them with the couscous, 1 tablespoon of chopped mint, 1 tablespoon of honey and a pinch of ground coriander.
