A great zucchini recipe for every taste:

Numerous flowers appear on the zucchini plant before the fruits. The large female zucchini flowers are exceptional for stuffing, the smaller male flowers are preferred fried.

Preheat the oven to 180 °C. Line an ovenproof dish with parchment paper. Clean the zucchini blossoms, removing the stem base and pistil. In a large saucepan, bring water to a boil and season with salt. Blanch the flowers in it for about 1 minute, drain and dry with a dishcloth.

Mix the Parmesan cheese with the ricotta, the egg yolk, pepper and a little salt. Carefully spread the flowers apart and place them with the cheese mixture in the prepared pan and bake for 10 minutes. Bring to the table hot.
